Đun nóng dầu ăn trong chảo/nồi, cho thịt vịt đã ướp vào, xào khoảng 10 phút đến khi thịt săn lại. Bước này sẽ giúp cho thịt vịt khi nấu vịt om sấu sẽ thơm mềm và ngấm gia vị hơn. Tiếp theo cho quả sấu, khoai sọ cùng 1 lít nước vào nấu cùng. Nêm bột ngọt cho vừa ăn, nấu cho đến khi món ăn chín thì tắt bếp.
