Củ sen gọt vỏ thái miếng vừa ngâm nước muối loãng cho khỏi thâm. Hành boa rô rửa sạch, thái khúc nhỏ khoảng 2cm. Cà rốt gọt vỏ, rửa sạch, thái miếng dày khoảng 1cm. Hành tây bóc vỏ, thái miếng vừa ăn. Tỏi bóc vỏ.
Thịt nạc vai thái miếng vừa ăn, ướp thịt cùng 1 muỗng canh nước tương Nhật Bản (Kikoman), 1 muỗng canh rượu gia vị mirin, ½ muỗng canh đường, rượu sake, dầu mè trong 15 phút cho ngấm gia vị. Phi thơm tỏi, hành tây với chút dầu ăn rồi cho thịt đã ướp vào đảo đều.
Tiếp đó cho cà rốt, củ sen vào đảo cùng. Đổ nước, cho nước tương Nhật Bản, rượu sake, đường, rượu gia vị mirin và dầu mè còn lại vào, đun sôi trở lại rồi nêm nếm vừa ăn.
Hạ nhỏ lửa, đậy vung rồi để cho nồi thịt kho sôi liu riu khoảng 30 phút hoặc đến khi nước cạn, các nguyên liệu chín mềm.
Thêm hành boa rô vào đảo đều rồi tắt bếp. Cho món ăn ra bát và thưởng thức ngay khi nóng.
