Gọt vỏ, rửa sạch và nạo nhỏ, thái sợi các loại rau củ, rau thơm thái nhỏ. Đậu phộng rang giòn, xát vỏ, giã hơi dập. Chanh bổ đôi, vắt nước cốt, ớt cay thái nhỏ, tỏi băm nhỏ, khế thái hạt lựu.
Cho bắp cải tím và bắp cải trắng vào âu sạch, trộn đều rồi cho các loại rau củ còn lại vào gồm củ cải đỏ, cà rốt, ớt ngọt và các gia vị tỏi băm, ớt băm, khế, nước cốt chanh, 2 thìa nước mắm ngon, 1 thìa đường, 1/2 thìa bột ngọt rồi tất cả trộn đều lên. Khi trộn đều xong, có thể nêm nêm lại gia vị theo sở thích.
Để phần rau củ trộn tầm 10 phút thì cho thịt bò khô, rau thơm thái nhỏ vào cùng. Tiếp tục trộn đều lại, để thêm 5 phút là có thể thưởng thức món gỏi rau củ ngũ sắc rồi.
