Cá bống kho thịt ba chỉ là món ăn dân dã mang đậm bản sắc dân tộc Việt Nam. Từng con cá bống nhỏ nhắn nhưng chắc thịt được bao phủ bởi nước kho đậm đà màu cánh gián, vị cay the của ớt và tiêu hoà trộn vào nước kho rất bắt cơm, ăn bao nhiêu cũng không biết ngán.
Cá bống làm sạch, cho vào tộ đất. Ướp cá với 1 muỗng canh đầu hành lá băm, 1 muỗng canh hành tím băm, 1 muỗng canh đường, 1/2 muỗng canh hạt nêm, 1/3 muỗng canh muối, 1/3 muỗng canh tiêu, 2 muỗng canh nước mắm, 1/2 muỗng canh nước màu và 4-5 trái ớt đỏ. Trộn đều tất cả rồi ướp 15 phút cho cá thấm gia vị.
Bắc nồi đất lên bếp, đảo sơ và nhẹ tay cho thịt cá săn lại thì thêm 70gr thịt ba chỉ và 250ml nước dừa. Kho đến khi nước sôi lên thì hớt bỏ bọt dơ. Hạ lửa nhỏ kho cá liu riu khoảng 30 phút.
Lúc này nước kho sẽ keo lại, thịt cá bống và thịt ba chỉ săn, thấm gia vị. Trước khi nhắc xuống ăn rắc lên cá 1 ít hành lá và tiêu cho dậy mùi.
Nồi cá bống kho thịt ba chỉ thơm nức, đậm đà, ăn với cơm trắng và rau luộc là hết xảy.
